Fresh mussels, tarragon, white sauce, dry white wine, mussel meat, sea salt and cracked black pepper.

Ingredient list:

Fresh South African black mussels

50 grams fresh mussel meat

A few pinches of sea salt and freshly cracked black pepper

One teaspoon of dried tarragon

One teaspoon of finely chopped garlic

Half a cup of dry white wine (Sauvignon Blanc would be best)

White sauce

Method:

Lightly fry the garlic in a small amount of oil. Make sure the pot is hot and add the white wine, quickly add the closed mussels. Close the lid to allow the mussels to steam. Discard any that have not opened. This should take approximately three to four minutes.

Gradually add the white sauce to the mussel mixture and mix in the mussel meat. Throw in a couple pinches of salt and pepper to your taste.

Finally, add the tarragon to the mussel pot and allow to simmer for five minutes on a medium to hot heat.

Serve with a sprinkle of parsley and crusty bread.
