A healthier recipe for Banana Loaf

Mother Theresa once said that in India, a woman dying on the street will share her banana with anyone whereas in America (and probably a lot of other countries) people hoard a mass of bananas to sell them at a profit only for them to go bad. In the spirit of Banana Bread Day, don’t let your bananas rot, make use of this easy recipe and share it with someone.
A healthier Banana Loaf recipe
Ingredients:
3 very ripe bananas
1/2 cup honey
3 tablespoons canola oil, plus a little more for oiling the loaf pan
1 teaspoon pure vanilla extract
1 1/2 cups whole wheat flour
1 1/2 teaspoons baking soda
1/4 teaspoon salt
3/4 cup chopped walnuts or 3⁄4 cup chocolate chips
Method:
- Heat the oven to 180 degrees. Lightly oil a loaf pan.
- Mash the bananas and mix with the honey, canola oil and vanilla extract.
- Stir together the whole wheat pastry flour, baking soda and salt. Add the nuts.
- Blend the two mixtures and spoon into a lightly oiled loaf pan. Bake for 40 minutes, or until centre is set.
- Poke the centre with the back of a fork and if it comes out clean, your cake is ready.
Most banana bread recipes are saturated with butter and sugar. This one uses a small amount of canola oil instead – which is much better for your heart. Substitute the sugar with honey and you get added flavour. Don’t use regular whole-wheat flour if you can help it. It is too heavy for this recipe. Look for whole-wheat pastry flour instead.
